The theory of rebirth should be understood on the basis of our understanding of the nature of causality. Because according to Buddhism every event must have preceding causes and conditions. Therefore, even a single cognitive event; say an instance of consciousness or mind, must have causes and conditions.
And so, through this process we can trace the beginning-less continuum to the consciousness . And once we are able to develop that kind of understanding of the causal process than the theory of rebirth develops naturally on the basis of that kind of causal understanding.
In Buddhism there is the mind you're primarily talking about and then the subtle mind. The mind you are talking about is dependant on the physical body as you describe and thus ends when the body dies and can be changed by changes in the body when alive.

Evolutionary Track
Aside from the occasional trysts with fate and the serendipitous encounters with fortune, I'd say that I have stayed pretty much on the same path as most humans. It seems that my destiny may be aligned with that of most mortals, who by the way, during my latest journey, I had learned much from. What I hope they have learned from me is the sanctity of Love, Understanding, Good Will and of course, the most difficult for those of flesh and blood - Forgiveness.
As it is with most of my stays here, I'm not in the position to criticize nor challenge although what I see at times provides me impetus to offer what I'd been given - Reason. Just as I had written not so long ago:
I have Reason, I have Rhyme
Pondering my thoughts,
Throughout the eons of time
Many times we are posed a question, so simple yet the most difficult to answer: Why am I here? Ah, because you belong. Simple enough an answer and it really needs no further explanation . . .
You know, I rely on you as much as you rely on me and the symbiotic nature of our relationship provides the universe with balance, although at times, it may not appear to be so . . .
Life to me, an open book
with each page, I learn something new
Yet, I await the final
the most revealing clue
Perhaps, when our fates are decided, would we learn the truth . . . eternity it beckons, so I had heard as I stood sentry-like against the winds of time . . .
Far in the distance, perhaps another void
a place where my existence
can never be destroyed

There's no rational discussion that includes reincarnation or life after death. The only thing you can revert to is allowing others to think what they want, based on the principle that all knowledge is not available. However, if you try looking for evidence for immortality, you'll come up wanting.

Uh, maybe because we want to believe that we will be reunited with people we care about someday? Maybe because it's impossible to intellectually or emotionally grasp the concept of one's own consciousness ceasing to exist? Maybe because we don't want our consciousness to cease to exist?
Rational thinking is a valuable tool. But it's not the only way to understand the world. There could be aspects to life which we can't perceive with our five senses. There could be aspects to our existence which are beyond rational comprehension. To deny that possibility is in itself irrational.

When there is any valid evidence for it.
There is much we can talk about concerning why people believe things that aren't true. There are various insecurities that humans have that are easily played upon by religious people. We have been emotional animals far longer than rational ones, so those types of tactics work.

the nature of electricity is one that once created cannot be destroied but only dispersed.
the human body runs off of electricity especially the brain.
this electricity has to go somewhere when the body breaks down.
so the existence of a soul is simply a natural phenomina of electricity being able to gather without dispersing.
