Crockpots are made for slooooowww cooking for best results.
3 pounds takes 3-4 hours on high, but you'll get better results if you do the following:
Sear your roast in a pan (olive oil, salt/pepper/garlic powder if you like) to make the outside brown.
Put it in the crock -- add some beef stock (1 cup -- some red wine if you have it (or amber beer) -- about a cup) and some seasoning or buy the McCormick stew seasoning.... cook on high for one-two hours.
Then add your veggies...
Mushrooms, Creamer Potatos, Celery, Pearl Onions, Carrots, frozen peas, garlic, corn... whatever you like. Cook on low for the next two to four hours.
You could put veggies in at the beginning if you wish...but they cook quickly and I like mine a little more firm.
If you use potatos, you don't need to have noodles.
YUM!!!

When I make a pork roast in the slow cooker, I brown the meat in a skillet, use about 1/2 cup dry white wine to deglaze the pan. Pour that over the meat in the slow cooker. I usually quarter an onion and put that around the meat. Sprinkle some rosemary on the top and that's it. I have a rack for my crockpot--I put the meat on that rack rather than have it sit in juices. Sides: Scrub but don't peel two sweet potatoes. Nuke 5 -7 minutes on high. Slice in half and dot with butter and brown sugar. Green Beans in garlic butter Steamed broccoli, cauliflower or broccoli

It takes about six hours in the crockpot. I like to put a couple of cans of sauerkraut in with mine along with several peeled potatoes. This makes a nice dish and tastes good!

I'd say 20 mins per lb. As for the noodles, no yolks is great and use the drippings to make your gravy. Just add the drippings a tbl spoon at a time per half cup of brown gravy. It's delicious!!

6 to 8 hours on low will make it tender. Add carrots, potaotes, green beans in with the roast and then have rolls with it.
