to retain the color of vegetable .put 1/4 to 1 teaspoon sugrar into the vegies right after you put the vegies to cook in the pan!

Also if u want to store peas and stuff in the freezer. Put a teaspoon of sugar in the water and boil. Then just dip the peas into it for like 10 secs and store away!
Will be as good as new the next time ull take them out!!

Blanch vegetables, like carrots, and broccoli first before adding to a dish, in boiling water for 5 minutes, this brightens the color, and cooks faster. But it seems you also might be overcooking your vegetables. Crunchy fast cooked vegetables are better for you, thats why in oriental dishes, their colors are always bright.

Add browning to all red meat dishes even if they don't contain any meat. Very little meat and a pkt of soya mince mixed with carrots peas onions and browning looks really rich as though you've used lots of really lean red meat.

depends on what you are cooking, but if its vegetables the best way is to steam them then plunge in ice water to keep the colour

Adding Bicarb destroys the vitamin C so is counter productive. Just steam them.

You just have to make sure that you don't over cook your veg and they will not loose their natural colour.
