It's the literal meaning of the name. All of the cities in the region were originally under the rule of HIS MOST CATHOLIC MAJESTY, THE KING OF SPAIN:
Los Angeles = The Angels
San Francisco de Asis = Saint Francis of Assisi
Sacramento = Sacrement
San Jose = Saint Joseph
San Diego de Alcala = Saint Didacus of Alcalá
Las Vegas = The Meadows

Los Angeles means "The Angels" in Spanish.

LA was initially called El Pueblo de Nuestra Senora la Reina de Los Angeles de Porciuncula (the Town of Our Lady Queen of the Angels of Porciuncula) - you can see why this was shortened to Los Angeles (The Angels).
