Hi,

I am an amateur pizza baker from home. Now I am looking to perfect my pizza recipes but I have already many problems with the dough. How long can you rise pizza dough, i heard that 24 to 48 hours is great! Does that mean that you can leave the dough in the bowl covered with a towl for that long? Or does it mean that you would let it rise for 1 hour in the bowl first and then later in the fridge ?
I am very confused with how long you can do what with pizza dough ... and how long you can keep it and what happens if you keep it too long ?

yes ... many questions ... all about that dough ;-)

Pizza Dough should rise only 2- 3 hours at the most! 24 - 48 hours is far too long and you will end up with a sticky mass of overgrown dough. It's best not to watch the time and note the size of your dough after you finish kneading it. After the dough has doubled in size it's ready to use or refrigerate. Place the rounded ball of dough in a round bowl. Be sure that the dough has enough room to double in size. Cover the bowl with Saran Wrap or a tight fitting lid to prevent a crust from forming. Leave the covered dough on your counter and allow it to rise. If it's warm your dough will grow at a faster rate and if it's cool it will rise much slower. After the dough has risen you should use the dough, refrigerate it to prevent it from growing further, or freeze the dough for a later use.

Publix Pizza Dough

Awsome Pizza Dough

1 cup Water (80-85 degrees)
2 tbl Olive oil
1 tsp Sugar
1 tsp Salt
1/8 tsp Fresh garlic (I use crushed garlic sold by the jar)
2 1/2 cup Bread flour
1 dsh Italian seasoning
2 tsp Yeast (or one packet)

Enter ingredients into bread machine in the order listed. Put bread machine on dough cycle for large white loaf. When dough enters Rise cycle, take out, flour lightly, place in large bowl and cover with very warm, damp cloth. Set in warm place to rise. Let rise for about 1 1/2 hours.
Spread out, brush with olive oil, add toppings as desired. (Final sprinkle of Parmesan Cheese adds a great touch no matter what toppings you use.)
Bake for 10-12 minutes on pizza stone pre-heated for 20 minutes in 475 degree oven.

I just buy ready made dough from the bakery at Publix® grocery stores. It is only $1.50 and tastes great! We make pizza at home once a week, and it is such a hassle to make homemade dough. I don't know where you live, but if not near a Publix® I would ask the local grocery store bakery if they make it. Life is too short to worry about dough.
