It is made from Flour, Egg, Milk, Salt that are spooned into boiling water making them into a small dumpling, then strained and then fried in Butter/Margerine and onion (and pepper to taste). Can anyone tell me the actual name of this?

You have the proper name.
6 x eggs, beaten
1 pch salt
3 dsh vinegar, approximately
1/8 cup cold water
all-purpose flour, as needed

Beat together eggs, salt, vinegar, and water. Add flour till thickened. Drop into boiling water or soup from spoon. Done when they float to the surface.

or this method

2 cup grated raw potatoes
2 x eggs, beaten
1 tsp salt
1 1/2 cup flour

Grate potatoes finely and drain off brown liquid. Add eggs, salt and flour to make stiff dough. Drop dough into salted, boiling water from wet tablespoon, using finger to scoop out the dough. Dumplings will be about 1 1/2 inches long.
They are done when they rise to the surface of water. Remove and drain. When cool, refrigerate. Delicious sauteed in butter or heated and served as they are with meat. Kluski takes the place of potatoes

My recipe book calls it Hungarian kluse, but a websearch shows that it is, as you said, kluski. I usually use a spaetzle maker which makes very small, noodlish dumplings. Its a lot of fun so you may want to look into it, if you're thinking of making kluski. There's a picture of one at the bottom of this link:
