I know Vidalia's are sweeter, but not all white onions are. I'm trying to figure out which onion, white or yellow would be best for a slow cooker.

For a slow cooker, deffinatley a yellow onion, they are a lot stronger than vidalias(sweet onion) and white(not an overpowering oning, but still has flavor. Or, you can go with the mini white onions, they are a mix of all of them.

red. A lot depends on where the food comes from like vidalias can only be grown in that particular soil to have that specific taste. When you find an onion you like make a notation on the calendar, ask the produce guy where it comes from, and check canning book to see if it is a good keeper and then each year buy a bunch cuz they can keep a long time in the right conditions. Yellows usually have the stronger taste but some whites are strong as well. With the whites that are on the shelves here now (south) if you put them in the bottom and cook as usual then they will turn to a liquid and maintain flavor so the mixing works well. The 1050 white is not strong untill it has been kept for over a month so length of time from harvest is also a factor. Often your produce manager knows these things but you may have to ask for that buyer person to get the low down. I pestered them so much they started posting this info with the price. Everyone liked that so pester away and tell um other parts of the country post the good info.

Strength in flavor. If you want full flavor you'll want red onions; really great for salads or grilled. Yellow onions are medium flavored yet the cheapest at the grocery stores. It's the most versatile, and can be used for any recipe there is. The white onions are the mildest - makes really great onion blossoms (found as appetizers at restaurants). I also love white onions in potato salad, tuna salad, and cold sandwiches.

The s\"strength" i.e., the eye watering ability, odor and "bite" depends on many factors, including, soil, Ph, fertilizer. The differences between yellow and white onions are constantly changing due to these and other factors, so it's not possible to choose one over the other.

Personally, for slow cookers, I always prefer yellow onions!!

Yellow onions will make you cry easier so I think they are stronger in smell, taste and burning of eyes. Either will work fine in a slow cooker.

Depending on your taste yellow onions are stronger, scallions are the best or spring onions.I like vidalian onions for salads because of the sweetness.

white onions are generally stronger, and i perfer their flavor in a slow cooker. Find your own perfence by trying each at different times.
