First, stay away from high sugar contenet. It's only a quick pick me up, and you crash hard after! Stick to protiens. The give you a longer lasting boost. Peanut butter sanwiches are soooo easy, good for you , and provide a great energy boost. Also keep things on hand like granola, mixed nuts, cottage cheese, sliced fruit and veggies, even a piece of ham and a piece of cheese rolled together, these will be better for you in the long run than a candy bar or an energy drink!

Quick Lunch World-Famous Macaroni and Cheese

2 tbl vegetable oil
2 stalk celery, diced
1 x onion, chopped
1/2 x sweet green pepper, diced
2 tsp dried basil
1/2 cup tomato, paste
2 x 28 oz cans plum tomato, chopped
1 x 28 oz can crushed tomato
1/2 tsp salt
1/2 tsp pepper
6 cup medium pasta, shells
9 slc processed cheddar cheese
9 slc processed mozzarella or Swiss cheese

Preheat oven to 425 F (220 C).
In large Dutch oven, heat vegetable oil over medium heat; cook celery, onion, green pepper and basil, stirring occasionally, until vegetables are softened, about 8 minutes.
Add tomato paste; cook for 5 minutes, stirring occasionally. Add plum and crushed tomatoes, salt and pepper; bring to boil. Reduce heat, cover and simmer for 2 hours.
Uncover and simmer for 1 hour or until sauce holds ripple when pushed. (Make-ahead: Let cool for 30 minutes; refrigerate until cold. Refrigerate in airtight container for up to 3 days or freeze for up to 2 weeks.)
In large pot of boiling salted water, cook pasta shells until tender but firm, about 8 minutes. Drain and return pasta to pot. Add 2 cups (500 mL) of the tomato sauce; toss to coat.
Ladle 1 1/2 cups (375 mL) more sauce into 13-x-9-inch (3 L) glass baking dish; spread half of the pasta over top. Repeat layers once; top with 1 cup (250 mL) more sauce. (Make-ahead: Cover and refrigerate for up to 1 day; uncover and heat in 350 F (180 C) oven until heated through, about 40 minutes.) Reserve remaining sauce for another use.
Overlapping slightly, arrange Cheddar and mozzarella cheese evenly over top; bake in oven until cheese is melted, about 5 minutes.

Potato/Cabbage Box (Quick Lunch)

1/2 x Cabbage chopped coarsly
2 sm Potatoes
1 doz or more mushrooms
2 tbl Minced chives
x Salt
x Black pepper
x Paprika

Layer into lunch box in this order. Do not mix. Mix at work and nuke for 10 minutes on high.
Option: I would think this would be good with some caraway seed or Oregano added. I could also imagine using 2 teaspoons of sweet curry instead of the pepper and paprika.

granola bar (like a Nature Valley bar-those are good) and a yogurt. Yoplait is the best-you can use any kind but I recommend
yoplait.
