Baked Rice Pudding
3 egg whites
1 egg
1 1/2 cups 1% milk
1/4 cup sugar
1 teaspoon vanilla extract
2/3 cups cooked rice
1/3 cup dates, chopped (or raisins)
Pinch of nutmeg or cinnamon
1. In a medium sized mixing bowl, combine egg whites, egg, milk, sugar and vanilla. Beat until combined but not foamy.
2. Add cooked rice and dates and mix well.
3. Pour rice mixture into a 1 1/2 quart casserole dish. Place casserole dish in a baking pan then place in oven. Pour boiled water into baking pan around the casserole dish to a depth of about an inch.
4. Bake, uncovered at 325° for 45 minutes or until a knife inserted halfway between the edge and the center comes out clean.
5. Serve warm or chilled with a sprinkle of nutmeg or cinnamon.

A quick and easy recipe for rice pudding.
Make about 2 cups of instant rice according to box instructions.
Make vanilla instant pudding according to the larger box instructions. Add the first two together before pudding sets up, along with about 1 1/2 cups raisins and 2 tablespoons nutmeg.
Put in fridge long enough for pudding to set up and eat cold.
Yummy and quick!!!

Custard Rice Pudding

INGREDIENTS:
1/2 cup plain cooked rice
3 eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon grated lemon rind
1/2 cup raisins
3 1/2 cups milk
ground nutmeg, freshly ground if possible
PREPARATION:
In a large mixing bowl, mix all ingredients except nutmeg. Pour mixture into a lightly buttered shallow baking dish and sprinkle with nutmeg. Place baking dish in a pan of hot water in oven and bake at 300° for about 1 1/2 hours, or until set.

Kheer (rice pudding)
This creamy rice pudding is delicately flavored with cardamom and full of nuts. It's a great dessert for anytime of the year. In south and east India versions of it are made for certain festivals. In the South, Kheer is called Payasam and in the east it is known as Payesh.
INGREDIENTS:
2 litres full-cream milk
1 can sweetened condensed milk
1 tsp cardamom powder
1 cup sugar
1 cup Basmati rice
50 gms almonds blanched and slivered
50 gms raisins
A few strands of saffron
Rose petals to garnish (optional)
PREPARATION:
Wash the rice well and soak for half an hour in enough water to cover it fully.
Put the milk, condensed milk and sugar in a deep, thick-bottomed pan and boil. When the milk comes to a boil, add the rice and simmer.
Cook till the milk thickens and reduces to half its original volume.
Add the almonds, raisins and cardamom and cook for 5 more minutes.
Turn off the fire and add the saffron. Stir well.
Allow the kheer to cool, then chill.
Serve cold garnished with rose petals.

1 1/2oz rice
1 1/2 oz sugar
1 pint milk
sprinkling suet
soak the rice in a little boiling water for as long as you can (ie overnight). add the milk and sugar and sprinkle the suet on top. stir and bake for about an hour or until cooked at 160.

you need pudding rice then you caneither boil it with milk or put it in the oven low for an hour or 2 often good to used condenced milk half way through. you would need to cheek it and add more milk
