Yeast is not good for digestion. I have heard of leavening combinations, that can be used as a substitute for yeast. I would love to be able to create this substitute.

Try buying Ezekiel:49 bread. It is made without yeast.

Ask your Jewish friends... they've been doing it for a very very long time. Personally, I think that it looks like a large soda cracker when they get done.

How do you know that yeast, which has been a major part of human foods (bread, beer, wine, and PIZZA! to name a few) since the dawn of time is "not good for digestion"? Is this something out of the Journal of the American Medical Association?

Let's just say I'm skeptical.

well there is always flatbread / chappatis
grind your own grain if possible
mix with sea salt and water and roll out, add a little cold pressed oil, fold up and roll out again
cook on a hot griddle

any optional extras give flavour
curry
cayenne pepper
linseed and oats (presoak in hot water)

have with veges, seaweed, rice, pumpkin, lentils etc
