BAKE

Foil or not? Not! Experts agree that wrapping potatoes in foil for baking actually increases the cooking time and, because the steam is trapped, makes the skin and flesh soggy.
Scrub well. Rub each potato lightly with cooking oil.
Pierce each potato several times with a fork so steam can escape.
Arrange in an even layer on a baking sheet for easier handling.
Conventional Oven - Bake at 425°F for 50 to 55 minutes for 90 count.
Convection Oven - Bake at 375°F for 50 to 55 minutes.
Larger potatoes will take longer to cook. Those cooked on a baking sheet may need turning for even cooking. Potatoes are done if tender when pierced with a fork and the internal temperature reaches 210°F. Keep in a warming drawer or under a heat lamp for no more than 20 minutes before serving. Wrapping potatoes in foil after cooking does help hold temperature, but will also soften skin.

To serve, cut cross in top, then squeeze ends and push to center. Fluff center with a fork.
Also:
The problem with reheated potatoes is not the re-heating but how you store the potatoes after they are cooked. If they are left to cool at room temperature and then left unrefrigerated, conditions may be right for growth of Clostridium botulinum (botulism); especially if they are sealed in foil so that oxygen is kept out of the potato. This has actually happened .
So... The best thing for you would be ask one of your local restaurants to bake them for you and have some pick them up for you just prior to serving. Or, have a caterer deliver them.

Sounds like triple the work - precook, store, reheat and then transport to the party and still serve hot. Don't think the results will be good. If the party location has a big enough oven, and enough hookups for enough crockpots, and microwaves, I would prepare them there. Make-ahead mashed potatoes is another idea.

Must be time to clean out the fridge. Where the heck are ya going to store these babies along with all the other fixings for this party.
Hi neighbor! may I borrow your fridge please? Oh and by the way here's an invite to a party a i'm having. Make that 76 potatoes. I've catered a few events and in the begginng yes I got the help of neighbors, ovens and such. I know it's intense work but you reap the reward. You can Bake Stuff your taters upto 3 days ahead on cookie sheets and pop them in the ovens (plural, hi neighbor) 30min @350. Oh geez where did I put the salad dressing.

Hire a Baked potato oven. You can get them through catering firms and they sometimes come with the cook. Might cost you a little but results would be worth it.

On the day before the party,Bake your potatoes until they are JUST about done. Wrap them in foil and chill them until the day of the party. During the party, or just before, put them on the grill until they are done.

Pre-cook them in the microwave, so they are cooked through, but not crispy (don't forget to wash, dry and prick them with a fork all over first). Then on the day, crisp the skins and re-heat them by baking. In between, I'd let them cool, wrap them in foil, and keep in the fridge.

Yes, you can cook them prior to the party and reheat them. Wrap them in foil individually and bake until done or just about done.Put in frig to cool. I have put them in my roaster oven to keep warm. Or you can reheat them and put them in a "cooler". ( works to keep hot things warm too)

You could ask your local bakery if they will cook them for you - they might even lend you the trays. You will have to fine out how much they'd charge, or even if they do it, but I'm fairly sure that if you've got a nice shop that sells bread, you could try and talk them into it.

You can buy boxes of precooked jacket potatoes from the cash and carry. Usually come in boxes of 24 and are not expensive. Taste really nice!
