No baking required for these fudgy oatmeal cookies!
INGREDIENTS:
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter
1 teaspoon vanilla extract
1/2 cup chopped pecans
2 1/2 cups quick-cooking oats
PREPARATION:
Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla and chopped nuts. Add oatmeal and stir to blend thoroughly.Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies

Chocolate Cream Cheese Brownies
Yields about 48 bars
Filling:
1 cup chopped bittersweet or semisweet chocolate or chocolate chips
1/4 cup heavy cream
1/2 lb. cream cheese, room temperature
1 egg
2 teaspoons flour
Brownie Batter:
9 oz. (18 tablespoons) unsalted butter, room temperature; more for buttering the pan
1-1/2 cups sugar
5 eggs
1 teaspoon vanilla extract
1/8 teaspoon almond extract
1-1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1/4 teaspoon baking powder
Preheat the oven to 350ºF
Icing: Approximately 12 oz. bittersweet or semisweet chocolate, finely chopped (about 2 cups)
The Filling: Slowly melt half the chopped chocolate and cream together in a microwave or a double boiler. Set aside to cool. In an electric mixer fitted with a paddle attachment, beat the cream cheese and egg together until fluffy. Add the cooled chocolate mixture and mix well. Add Add the flour and the remaining chocolate and mix until incorporated. Chill the filling while you assemble the brownie batter.
The Brownie Batter: Butter a 9x13-inch baking pan. Cream the butter and sugar in an electric mixer until fluffy. Add the eggs one at a time, making sure that each one is fully incorporated before adding another. Occasionally scrape down the sides of the bowl. Add the vanilla and almond extracts. Sift together the flour, cocoa, and baking powder and gently blend them into the batter.
Assembly: Using an offset metal spatula, spread half the brownie batter into the prepared pan. Spread the filling over the batter. Spoon the remaining brownie batter over the filling and gently spread it into an even layer. Bake for 35 minutes, until a knife inserted into the center of the brownie comes out clean.
The Icing: As soon as you remove the brownies from the oven, sprinkle about three-quarters of the chocolate on top. Let sit about 5 minutes, until the chocolate has melted. Gently spread spread the soft chocolate into a thin, smooth layer. If it isn't enough chocolate, sprinkle a few more pieces on top and spread again, but be careful not to make the icing too thick.
To Serve: Let the bars cool before cutting.

A lot are saying cupcakes, they're not wrong. It's easier to eat at the office than a cake. Make plenty of these and impress the whole office...
White Chocolate Macadamia Muffins-
1 3/4 c flour
3/4 c sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 egg
1/2 c milk
1/4 c butter, melted
3/4 c white chips
3/4 c chopped macadamia nuts
Glaze 1/2 c white chips
2 TBS heavy cream
In a bowl, combine flour, sugar, baking powder, and salt. In another bowl, wisk egg, milk, and butter. Stir in dry ingredients just until moistened. Fold in chips and nuts. Fill muffin cups 2/3 full. Bake at 400 for 15-18 min. Cool 5 min before removing from pan to wire rack. For glaze, melt chips and cream in microwave. Stir until smooth. Drizzle over muffins.

Double Chocolate Drop Cookies-
1 c butter
1 1/2 c sugar
2 eggs
2 tsp vanilla
2 c flour
2/3 c cocoa
3/4 tsp baking soda
1/4 tsp salt
1/2 c toasted slivered almonds
1 3/4 c milk choc chunks
Heat oven to 350. Beat butter, sugar, eggs, and vanilla until light and fluffy. Stir together flour, cocoa, soda and salt. Add to creamed mixture. Stir in almonds and chocolate. Drop onto ungreased cookie sheet. Bake 8-10 min cool clightly. Remove to wire rack. Cool completely.

This is a wonderful recipe, very easy and can be made in batches.
CHOCOLATE ORANGE BROWNIES
4 oz marg
6 oz orange flavoured chocolate or 1 chocolate Terry's Orange
2 eggs
4 oz caster sugar
3 oz sel raising flour
1 Pinch salt
Heat Oven to 180C.
Line a 7x7 shallow tin.
Melt marg and 2oz chocolate together in a pan.
Roughly chop the remaining chocolate.
Beat the eggs and sugar together until pale and thick, stir into the butter mixture then fold in the flour and salt.
Transfer mixture to the prepared tin and sprinkle with the chocolate pieces.
Cook for 25-30 minutes until firm.
Cool in the tin until COLD before cutting into squares

For me it would have to be old fashioned rice crispie cakes... simple but sooooo effective and you can even add a bit of class by popping a smartie or jelly tot on the top!
Melt the chocolate and pour over little piles of rice crispies, place into individual cases and allow to set, yummy!

12oz self raising flour
12oz soft margarine
12oz caster sugar
6 eggs
2 level teaspoons baking powder
beat all together until smooth put in a well greased roasting tin or line it with baking paper cook until well risen gas mark 6 or 170 electric should take about 40 mins cool and split add jam and cream
you should have enough for 32 slices

make cup cakes like little cakes for everyone buy boxes of mix when on sale at grocery store for 1 dollar or less and buy a few boxes each box can create at least 24 cup cakes and if you want just buy heavy cream and make your own whip cream for all buy a big container and mix it till its fluffy and whiped into cream then all you do is make the cup cakes and for simple ideas just use alittle milk alittle water and eggs or vegetable oil and you will be good to go u can buy vanilla chocolate or even strawberry flavored cake mix and watch them eatten up in little to no time
