I am in the process of completing a chef's course and was wondering the best brand of knives to buy a set of e.g. global, swibo etc....

I'm a chef too an i've always used global or sabatier knives. Not cheap though. Hope this helps.

If you can find a set Gerbers' Balanced Handle knives I think those were the best ever made. They'll be hard to find but there's got to be a set out there somewhere. this knife was so balanced that you could chop,dice,slice or what ever all day and not get tired.

A lot of people will say global but if they are for home use and you are not professional then i would stay away from them. Try Victorinox-a Swiss company who also make the Swiss army knife. Good knives, stay sharp and have a good weight.

Wusthof Trident's my choice. I knife is a knife, like a car's a car.
What ever you can afford, get it. Just make sure you keep them sharp, as in a car, bad breaks are looking for an accident.
Side note: I never let anyone use or wash my knives, a bit anal yes, but they're my babies. Congrats on your course, we need some fresh culinary inventors.

i have an old set of messermeister that have served me well...but i went for an american made home grown knife it is Warther handmade from dover ohio and i cant be anymore satisfied then with these knives ...they come from a family business...and the man that started it was a master carver (warther) i have had this set for 20 years and i send them back once a year and they fine tuned the sharpening of them for me...and they have a lifetime waranty and will sharpen for free and replace for any damange it the price was out of this world.....Warther.com.........in dover ohio

Sabatier,My choice. BUT Japanese are excellent=( Kai Shun, Shun Pro & Pure Komachi ) German knives also =Chroma , F Dick, Henckels, Messermeister ,

Definately has to be Global. They are Japanese, 100% stainless steel, very sharpe and very easy to keep sharpe. They are also designed to be very ergonomic in the hand. I wouldn't use anything else!

but i wouldnt buy them for work. ive been in the kitchen forever, and your knives take a beating, and dont buy the best. they'll just get stolen. take it down a couple notches and get something that wont make you a target.
