i need to describe what's happening to the pasta during cooking...

In boiling water the starch is released and the water and flour base release the glutines in the flour. The more you cook it the more softer it gets and washes away the glutine structure. Welcome to mush land

When pasta is cooking, the noodles soften, and the water boils.

as it cooks in the boiling water it asorbs the liquid which in turn softens the noodle if you cook pasta for a short period of time and then leave it set in the hot water it will increase the amount that you have as it asorbs more liquid just sitting there...
