I'd like to make pumpkin soup. my problem is i can't find pumpkin i'm used to. pumpkin back home in japan is very starchy, sweet, rich, bold flavour and orangy.here i'm in canada all i see is, akon,butter squash, etc.. i dont know which one is similer sweet flavor...also when i make soup with japanese pumpkin, i just steem and grind and add milk. canadian pumpkin require additional ingridients to enhance flavour?

this is a tough one, im not sure what pumpkin is easier for you to get, maybe you should use canned pumpkin?

1 cup onions, chopped
4 green onions, chopped
1/4 cup hard margarine or butter
2 teaspoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon ground ginger
1 cup vegetable stock
3 cups vegetable stock
1 (14 ounce) can pumpkin, without spices
1/2 cup light cream
Saute onion and green onion in margarine in large saucepan.
Saute until soft.
Mix in flour, salt, pepper and ginger.
Add first amount of vegetable stock, stirring until boiling and thickened.
Process in blender to smooth.
Stir in second amount of vegetable stock, pumpkin and cream.
Heat through

You can also make a delicious soup from butternut or acorn squash. Won't be the same as pumpkin, but just as yummy!!

Or just use a canned product. It's already got the excess water pulled out of it, so you can replace that moisture w/ flavored stock.
