Hi there, hope someone can help me. I'm looking for a simple recipe for muesli cookies. I have S.R. flour, butter, treacle, milk, muesli but no eggs :-(

Well if you have a good idea of how to make normal cookies, I would just do that and then add the muesli, instead of so much flour as muesli is quite dry. Yoghurt tastes really nice and helps to bind the mix as well as you don't need to always have eggs, and a bit of honey and cinnamon would make them taste nicer. When you've done that I would take scoops of the mixture and roll them in your hands and then flatten them down at a fair distance from each other on a baking tray, and cook them at about 150 degrees celsius for about 15-20 minutes

Muesli:

1 cup whole wheat flake cereal (such as Wheaties)
1 cup rolled oats
3/4 cup slivered almonds
2/3 cup sweetened dried cranberries
2/3 cup chopped pitted dates
1/2 cup untoasted wheat germ
1/2 cup dried figs, chopped
1/4 cup unsweetened coconut, toasted
1/4 cup oat bran
2 tablespoons sunflower seed kernels
1/4 teaspoon ground ginger
1 teaspoon salt
1/4 cup brown sugar
3 cups 2% reduced-fat milk

Combine first 13 ingredients in a large bowl. Add milk, stirring to combine.

Cover and refrigerate mixture overnight.

Yield: 7 servings (serving size: 3/4 cups)

I would add a mashed banana to make them juicy, and you could try chilling the mixture for a few hours before baking to let the flavours mix more. It sounds really nice-I might have a go myself!

couldnt you just add treacle to the muesli then freeze them.
