I have tried doing it in the past, but the batter seems to be too thin. Does anyone know of a good one that will work??

You already have been given some good ones, but here's another...
MOZZARELLA STICKS-
2 eggs
1 T. water
1 C. dry bread crumbs
2-1/2 t. Italian seasoning
1/2 t. garlic powder
1/8 t. pepper
12 sticks string cheese
3 T. flour
1 T. butter, melted
1 C. spaghetti sauce

In sm. bowl beat eggs and water . In plastic bag combine bread crumbs and seasonings . Coat cheese sticks in flour, dip in egg mixture then bread crumb mixture . Repeat egg and crumb
coatings . Cover and chill for at least 4 hours or overnight . Place on ungreased cookie sheet; drizzle with butter . Bake uncovered at 400 for 6-8 min. or until heated through . Allow to stand for 3-5 min. before serving . Dip in spaghetti sauce

Fried Mozzarella Cheese 1 lb mozzarella cheese or string cheese 1/2 c flour 3 lg eggs 1 c bread crumbs 1/2 ts garlic powder 1/2 ts oregano 1/2 ts cumin, ground 1 pn salt and pepper 8 oz marinara sauce, chilled 1 vegetable oil Cut the mozzarella into sticks a bit more than about 1/4 inch thick and about 1 1/2 inches long. Coat the sticks with flour, shaking off excess. Combine the bread crumbs and seasonings in a flat dish. Beat the eggs and place in a separate bowl. Coat the sticks by dipping them in the egg and then in the bread crumbs. The coating on the first stick should be fairly dry when you finish the last stick. Repeat with another dip in the egg and then in the bread crumbs. Deep-fry the coated sticks in oil for about 3 to 4 minutes until the coating is cooked. Fry in batches, keeping the finished ones warm in the oven. Serve with chilled marinara sauce or salsa.

Mozzarella stixs

INGREDIENTS
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
3/4 teaspoon salt
1 pinch ground white pepper
1 cup beer
4 cups safflower oil
1 egg white
1 pound mozzarella cheese sticks
DIRECTIONS
In a medium bowl, mix together flour, baking powder, baking soda, salt and white pepper. Gradually pour in beer. Whisk briskly. Cover and allow the mixture to stand 90 minutes.
In a large, deep skillet, heat safflower oil to 375 degrees F (190 degrees C).
Whip the egg white into the batter. Dip mozzarella cheese sticks into the batter.
With a slotted metal spoon, place coated cheese sticks a few at a time into the hot oil. Fry 2 1/2 to 3 minutes, until crisp and golden brown. Drain on paper towels and serve hot.

Crispy Mozzarella Sticks Marinara:

4 (3 x 1/2 x 1/2-inch) sticks part-skim mozzarella cheese (about 3 ounces)
2 teaspoons commercial pesto
4 sheets frozen phyllo dough, thawed
Olive oil-flavored cooking spray
1/4 cup fat-free tomato-and-basil marinara sauce

Preheat oven to 400°.

Coat cheese with pesto.

Cut phyllo sheets in half crosswise to form 8 (13 x 9-inch) rectangles. Place 1 phyllo sheet on a cutting board or work surface (cover remaining dough to keep from drying); coat with cooking spray. Place 1 sheet on top of first sheet. Fold in half crosswise to form a 9 x 6 1/2-inch rectangle. Place 1 stick of cheese at center of a short end of rectangle; fold long sides of phyllo over cheese, coat with cooking spray. Starting with the short end, roll up phyllo jelly-roll fashion. Coat with cooking spray. Place on a baking sheet coated with cooking spray. Repeat with remaining phyllo and cheese. Bake at 400° for 12 minutes or until golden brown.

Heat the marinara sauce in a small saucepan over medium-low heat until thoroughly heated. Serve marinara sauce with mozzarella sticks.

Yield: 2 servings (serving size: 2 cheese sticks and 2 tablespoons marinara sauce)
