Bought my son a quality 6 quart Homemade Ice Cream Machine, "Electric". Using all fine quality & natural ingriediants, 20 lbs of ice & rock salt to cool, yet the finished product, though tasty... Seems to have an icy texture aka minor grainy feel to the tongue. Wondering how Bryers & Ben & Jerry etc, make theirs so smooth? Does anyone have any suggestions???

well, for one, ben & jerry and all the other big names have $100 000+ equipment, while your at-home ice cream maker probably cost no more than $200. that's the major reason.

Your answer lies in stabilizers. There are a number that are used carob gum etc etc. What they do is limit the crystallization and also will not allow the ice cream to harden into a rock.as well as lenghthen shelf life. Products are available via the internet such as Cremox, but it comes in a 1 kilo gram container and is $30, which is enough for 100 gallons. It works well especially in sorbets and gelato which quite frankly beat ice cream by a mile and are better for you.

Ben & Jerry's and other premium ice cream makers use much more butterfat in them than the home cook. The more butterfat, the lower the freezing temp, which is hard for the home cook to achieve w/o commercial equipment.

You may try freezing longer, at a lower temp (add more salt and ice), then packing and puttting in the freezer to cure before eating.... IF you can wait that long! :-)

He is useing heavy cream, right? OK, what need to be done is increase the butter fat content, we we don't need a scared tounge.
Add ,for 6 qrts. one can of condensed milk and less salt to your ice, it appears to be freezeing to fast forming ice crystals. If ya need the ice cream that fast have a few pints of B&J's sittin' in the freezer. Taste your son's ice cream, nod, smile and say good job, then sneak off to the freezer. Remember to stash the container good or he'll find it.

maybe cuz the ur own machine cannot beat it so smooth and maybe cuz the ice isn;t beat up as good and the major companies....but none the less...homemade tastes better!!!
