Recommended:
Rioja. It has the reputation for being a classic match with lamb – and it is. None were a bad match.
Claret. The more opulent, up-front fruity Merlot-driven styles were okay, but the best matches were more restrained Cabernets from the Left Bank.
Reds with a herby twist, such as Chianti, or Cabernets from Coonawarra and Maipo can work.
Best avoided:
Red wines with a dark, brooding fruit character that will clash with the sweetness of the meat.
Reds with jammy fruit and no structure. This dish needs tannin and acidity to cut the fattiness.
Spicy reds, such as Shiraz. It might prove difficult, too, to find a good Pinot Noir partner.
Enormous block-busting wines that will overpower lamb.

A Sangiovese-based Red Wine (like Chianti and other traditional blends from Tuscany, Umbria, and Emiliana-Romagna) should have the right amount of acidity to hold up to the tomato sauce. Typically, sauces dominate the palate so they should be focused on more-so than the protein itself (although that is not a bad match either). If the dishes are particularly spicy (going a little heavy-handed on the Ras el Hanout for the Lamb Tagine) I would suggest a German Riesling, ideally of the Spatlese QmP designation (Rheingau, Rheinhessen, and Mosul tend to be the best appellations) which combine distinct aromatic character with significant sweetness and a strong acid backbone, ideal for spicy food. In the end, it doesn't have to be an exact science, if you enjoy what you had, then the pairings were fine, even though there are some rules to pairing, there are always different options, some more conventional than others. I've heard that Tunisia is starting to make some decent wine, so if you can get your hands on some, it might be the ideal circumstances to try some out with some North African cuisine.
