I take chicken legs & tights season well and drench it in flour. then I brown it in a very hot pan with olive oil, once brown on both sides I put it in the slow cooker, I then add onions, chopped tomatoes, garlic, peppers, carrots and potatoes and about 1/2 - 3/4 cup of chicken stock. Set slow cooker to high and let it all get tender and saucy. Serve w/ white rice.

Pot Roast

Mix together a can of cream of mushroom soup, with packet of dry onion soup mix and about 3/4 can of coke, pour on top of roast and add whatever veges you want, I use potatoes, carrots and mushrooms! I also use garlic in everthing I cook, preferably minced. Let it cook for 5-8 hours or longer if you wish, the meat will be tender and tasty. Crockpots are a life saver when you want dinner on the table quickly when you get home from work.

Serve with the reserved sauce. For a vegetarian option we like slow cooker mac and cheese or cheese tortellini in alfredo or marinara sauce. Here is how my mother makes mac and cheese. Ingredients: 1 1/2 cup dry macaroni 1 1/2 tablespoon light, soft tub margarine 6 ounces light Velveeta cheese, sliced 2 cups fat-free milk 1 cup fat-free half-and-half Combine macaroni, and butter. After you try this beef roast, you will wonder how you ever got along w/o a slow cooker!

Easy Crockpot Beef Roast

1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix

Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove. Doesn't taste AT ALL like salad dressing!!!

Slow Cooker Barbecue Beans

Prep: 5 min., Cook: 1 hr. This recipe is perfect for leftover barbecue. Although it calls for pork, feel free to use chopped or shredded chicken, turkey, or brisket. If time is a concern, pick up meat from your favorite barbecue joint (just make sure you get it without sauce to prevent the beans from being too soupy).

1/2 pound chopped or shredded barbecue pork
1 (32-ounce) can pork and beans, undrained
1 (14 1/2-ounce) can diced tomatoes with green peppers and onions, drained
1/4 cup spicy brown mustard
3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon molasses (optional)

Stir together first 6 ingredients, and, if desired, molasses in a 6-quart slow cooker. Cover and cook at HIGH 1 hour. (You can keep this recipe warm on LOW for up to 2 hours before serving.) Yield: Makes 8 servings
