Chips go stale because they absorb the moisture from the surrounding air. They are very dry when they are made and if they are left out they become less crunchy from the humidity they are exposed to. I had to write this as it is the first result on Google and it needed to be fixed.

Air and moisture make them go stale. Reseal the bag as tightly as possible or get a 'Chip Clip' one of those large plastic clips that close the opened end of the bag.

i keep all of my chips and crackers in the refridgerator. this keeps them fresh for a really, really long time--it keeps the humidity from getting to them and making them stale, that way i don't have to throw them out as often.

They absorb air, moisture and bacteria. You can keep them fresh longer by putting a packet of absorbant material (like you find packed into European or Japanese cookies) and sticking them in a sealed cannister.
