I've asked about rare meat before, but I just can't believe that many people like it.

Alot of it does have to do with culture and one's direct family. My family always loved medium rare to rare and that's what I've come to love. I also know now from being a chef that rare and medium rare really do have a whole different taste and texture than medium well and well done. Depending on where I am, whose cooking and what quality the meat is I am open to changing my temperature preference. But usually rare to mr does it for me.

Rare meat tastes better. That's all there is to it.
More flavour, tender, never tough, who cares what other people are ordering, have your meat the way you like it, but give rare (okay, at least medium rare!) a try, you may discover that it truly is delicious.

Rare meat is much jucier and more flavorful, as well as much tenderer than meat well done. In restaurants they use their cheapest cuts of meat for people who order well done because they feel that when meat is well done you cannot tell the difference between choice cuts and cheap cuts. Yes, I have eaten my meat rare to medium rare all of my life and find well done meat tastless.

i know what you mean. i cannot eat rare meat. i have to eat it well done. people say that when they eat rare meat, the meat is more tender and is full of flavor than if the meat is well done. i dont care, i just cannot sit and look at my plate full of blood on the plate.

Not all--the longer you cook meat, you cook out the flavor. Rare not only holds alot of nutrients but, it holds alot of flavor. Just take the taste test once. Cook a steak rare and one med to med well. Don't use ANY spices and just taste.

I've eaten my meat rare since I was a lad: Beef, Lamb, even Pork... Meat cooked "Well" is dry, chewy, and flavorless.

Prime Rib MUST be eaten rare... Steak should be rare to medium rare... pork chops should be medium rare... and a leg of lamb should be butterflied and grilled medium-rare.

The ONLY meat I like cooked "well" is stew beef, stew pork, fried chicken, sausages, and bacon !!
