I am steaming stuffed artichokes and I just tried the broth. There is a bitter taste. They are seasoned with bread, garlic, olive oil, salt, pepper,parsley and olives. Any suggestions?

The older the choke, the more bitter it becomes. You can try adding a bit of sugar to balance it a bit.

add some lemon juice to the poaching/steaming liquid.
