There are too many wonderful dry seasonings to compensate for no onions! I'm a diabetic and NEVER use onions, because onions turn to sugar in our system [in the pan too, just see how sweet they are when cooking / carmelizing] so I don't use them NOR Carrots either [also one of the highest sugar content vegetables as well], so in my gourmet cooking I use everything ELSE in great amounts..... for the bulk that she might like use sliced cabbage to replace that and for FLAVOR, I don't know if your friend is also alergic to shallots, scallions and of COURSE garlic which is used WITH onions anyway or onion POWDER [which I'm guessing she'd be alergic to also], but all other seasonnings, dill, tyme, rosmary, parsley, oregano, sage, the list is endless..... but she won't miss onions, guaranteed and I repeat.... the cabbage can give that same consistancy type bulk effect so all those things takes care of BOTH type subtitutes, flavor AND bulk! Hope this helps.

You might want to try (if you can get it) the Indian spice asafoetida, which is onion-like. Use sparingly (a few pinches) and always fry first.
The members of the onion family or shallots, onions, garlic, leeks and scallions. Is he allergic to all of these? Ask him especially if he's allergic to leeks, they would be a great substitution.
You could try red bell pepper, red ancho chilies, or green pepper or celery, but pan-fry them before adding to intensity their flavor. Good luck and bon appetit!
***
Here's some info on asafoetida
"Its odour is so strong that it must be stored in airtight containers; otherwise the aroma, which is nauseating in quantities, will contaminate other spices stored nearby. However, its smell becomes much milder in cooking and presents an onion-like taste. In India, it is used especially by the Brahmin caste of the Hindus and by adherents of Jainism, who are not allowed to eat onions. It is mainly grown in Iran, Afghanistan and Kashmir."

Apart from French onion soop, just do the same thing as you were planning to do and replace the onion with any other vegetagble. Try carrots, they are suprisingly good.

Don't use any onions or onion products. Stick to a meat, potato and veg dinner with nothing added.
