It is that time of year again... I have three huge pumpkins sitting in my kitchen. I am not into the carving so much (that is my husbands thing) I just like to bake the seeds. However, I want to try something different this year-- I don't want to throw the pumkin pulp away. So what can I do with it?

I hear people can cook with it...make pies and other such things. Do you all have any good receipes to share? Or even know a book/website where I can find such receipes?

Do you know any other uses for pumpkin pulp?

Oh my... I think Tom might be right...

Can I go with what James said about feeding the pulp to the birds? Does anyone know if that is ok?

Sorry, but pumpkin pulp for baking or cooking comes from a different kind of pumpkin, one much smaller and sweeter.

You CAN roast the seeds very nicely. Wash the seeds, put in a deep bowl. Melt about 3 Tbsp butter, drizzle over seeds and mix to cover. Add 1/2 tsp cinammon and same of cumin, mix. Spread seeds on a baking sheet, put into an oven preheated to 300, on shelf in middle level. Bake 30 minutes or so but WATCH the seeds to make sure they don't burn or brown too fast.

Pumpkin Muffins II

1 small sugar pumpkin, seeded
3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1/2 teaspoon baking powder
2 teaspoons ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon ground allspice
1 teaspoon salt
2/3 cup vegetable oil
3 eggs

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
Split pumpkin in half. Remove seeds and strings. Place on baking sheet, cut side down. Cover with foil and bake in preheated oven until tender, about 90 minutes. Remove pumpkin pulp and puree in blender. Measure out 2 cups pumpkin puree; set aside.
In a large bowl, stir together flour, sugar, baking soda, baking powder, cloves, cinnamon, nutmeg, allspice and salt. In a separate bowl, beat together 2 cups pumpkin puree, vegetable oil and eggs. Stir pumpkin mixture into flour mixture until smooth. Scoop batter into prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

I've heard of people doing two things with pumpkin pulp: (1) making pumpkin bread and (2) setting it out as a treat for birds.

If you choose to give it to birds, please double-check to be sure it's ok for them health-wise beforehand. I can't certify that it is; I just heard about people doing that.

cook it down and make pumpkin pie or pumpkin pancakes or pumpkin moose
