1 cup sherry or dry white wine
4 large yellow onions, thinly sliced into circles
8 to 10 cloves garlic, finely chopped
1 tablespoon whole wheat or unbleached white pastry flour
4 cups veggie broth
.5 teaspoon black pepper
Salt or low sodium soy sauce to taste
6 slices french bread, toasted

In a large heavy stockpot, heat wine until bubbling. Add
the onions and reduce heat to medium. Cook onions slowly,
stirring frequently, for at least 20 minutes, until they become
pastelike. (If you cook the onions too quickly, they'll taste
bitter).

Add garlic and continue to cook 5 to 10 minutes until garlic
begins to look brown. Add flour, stir well, and cook 2 minutes.
Add stock and bring to a boil.

Reduce heat and simmer 20 minutes. Season with pepper and salt or soy sauce.

French Onion Soup .
lb Onions,Sliced
2 T Unsalted Margarine
2 cn Low Sodium Beef Broth
1 t Worcestershire
4 sl Low Sodium French Bread
2 sl Swiss Cheese



in a heavy covered saucepan, cook onions in margarine at low temperature until soft, 15 to 20 minutes. Add broth and Worcestershire and bring to boiling. Lightly toast bread under broiler. Place 1/2 a slice of cheese on each piece of bread and broil until bubbly. FLoat a slice of bread on each bowl of soup.

French Onion Soup:

3 14-ounce cans ready-to-eat beef broth
3/4 cup canned French-fried onions
1/4 cup dry sherry
4 slices stale French bread
4 1-ounce slices Swiss cheese

Heat oven to 400º F. Arrange four 10-ounce oven-safe soup bowls on a baking sheet. Divide the broth and onions among them. Add 1 tablespoon of sherry to each. Float a slice of bread in each bowl and top with a slice of cheese. Bake 12 to 15 minutes or until the cheese is melted and the soup is bubbling.

Yield: 4 servings

HEARTY FRENCH ONION SOUP

4 tbsp. butter
5 med. size yellow onions, very thinly sliced
1/8 tsp. sugar
2 tbsp. flour
5 c. low-sodium beef broth
1/2 tsp. dried thyme, crumbled
1 bay leaf
1/4 tsp. black pepper
8 slices toasted French bread, each about 1/2 inch thick
1 c. grated Swiss or Gruyere cheese
1/4 c. grated Parmesan cheese

1. In a large, heavy saucepan melt butter over moderate heat; add the onions and cook, uncovered, carefully stirring until golden--10 to 15 minutes. Blend in sugar and flour; cook, stirring, 3 minutes longer.

3. Add broth, thyme, bay leaf and pepper; raise heat to moderately high and bring to a boil, stirring constantly--about 6 minutes. Adjust heat so mixture bubbles gently and simmer, partly covered, for 30 minutes. Remove and discard bay leaf.

3. Heat broiler.

4. Ladle soup into 4 flameproof bowls. Float 2 pieces of bread in each soup bowl.
