I would follow the method of ghost writers (yes, the guys who write books for you, an option you may want to consider...).
First, organise your thoughts and write a summary of your book. Then, write headings of possible chapters. (just for reference, you can change them once the book is written)
The long task is then to make a list of everything which is going to happen in each and to make increasingly detailed lists of it. Specify which anecdotes you want to include etc..
In other words, write the most detailed plan as possible. (boring, i know but essential)
And once you've done that, if your still alive, write it. If your plan is good enough that shouldn't be too hard.
Once you've got your first draft, get as many people to read it and try to improve it. There are professionals who can help you improve it (yes, ghost writer again).
When your satisfied with it, write a cover letter (explaining what its about) and send it off to publishers. Don't be upset if it takes a lot of time to get one to publish it: a lot of writers that made it big initially had the same problem.

start by writing a few chapters.
To pitch it to a publisher you need to have a couple of chapters written.
Then you write a brief overview (most publishers don't accept full manuscripts anymore) with a sample chapter and send it to the publishers.
You can also consider self publishing methods. Some people also go the route of getting a literary agent. But the truth is you don't need an agent until your very close to being finished.

The most important thing, though, is to work out the book and really know what you are writing first. Get most of it written and then go from there.
Brace yourself for rejection and working hard at getting published once your done. Even the Harry Potter books were rejected a few times.

Write the in your desired topic. Give the written one to all your friends and get the comments. If your friends feels this as good one, then go ahead. Meet the publishers without hesitation. If it is rejected by one dont worry keep trying with other publishers. When your friends comments is worst, dont go to the publisher
