I like my eggs with hot melted cheese. Whether they are boiled fried or poached.
I do that on french toast and pancakes too
There are many tasty varieties of cheese.. my favourite is
jalepeno cheese. My brother got me hooked on spicy foods
when I was only 2 almost 3.. He gave me a texas firebird onion
His intention was to teach me not to put things in my mouth but
he was surprised when I saw I liked the hot spicy taste! After that As long as I had an onion I didn't put other stuff in my mouth!
Now adays is very hard to get those hot tasting onions so I put
jalepeno in my onion sandwiches oh sometimes I include cooked egg.

I like mine over medium with the yolk broken - done but moist. Now that you brought up the fact that there is a child involved - here are two ways, I fix them for my Granddaughter to keep her interested. She loves them scrambled. I break the eggs into a small bowl, stir them until mixed, add a touch of milk, salt, and a dash of black pepper, and then I soft scramble the mixture (just done not dry). I usually sprinkle some shredded cheddar cheese on top. Also, occasionally, I hard boil some eggs (be sure to pierce the shell on one end prior to boiling to keep the yolk from darkening). Then I slice them with an egg slicer, add a little salt, and just a touch of cayenne pepper. She absolutely loves them. Good luck with the 2 yr. old.

My mom used to make "eggy's in a frame" when I was a kid. She would fry a couple of pieces of bacon then put a piece of bread on top with a whole cut out of the middle, then break an egg on top, cook that side then flip it and cook the other side. I used to like watching her make it and always ate the middle she cut from the bread. She also made shapes with my pancakes, mickey mouse (just the head) and people pancakes, head, body, arms and legs, always a little lopsided!

I personally like poached eggs on toast, with some fried potatoes on the side. For the little guy scrambled with some ham in it for variety,so it,s not so boring, or put the fried egg on top of the pancake with syrup on top, you,d be surprised how yummy that tastes, good luck.

I dont personally eat eggs alot but i have a fun idea to make him something different.
Try an omelete with like bacon or ham cheese tomato in it.
I reckon a fun one would be like spagetti letter omelete where you make the omelete and add tinned spaghetti letters so being two n all you can ask him what letter are you eatting now. make a learning experience out of it

I like fried egg sandwiches, over hard, on white w./mayo
also I cook scrambled w little splash of milk, green onion, chopped and a slice of american cheese.
biscuits and strawberry jam
when I have extra time I like to hard boil, then smash w/ fork til all broken up, sprinkle salt and pepper

Sunny Side up :) Scrambled eggs are good for the little ones. Sunny Side Up is the best for the older ones.

I will eat them any way eggs are good no matter what to me but try to scramble them and put cheese on top while theyre still hot
