Alos excellent as potato wedges - toss in alittle oiland then a small amount of paprika to make them sweet and spicy! Top with some sour cream - yum!
Another great use is sweet potato and sweetcorn soup - fry some chopped onion, finely chopped red chilli and sweet potato. Add stock and simmer for about 10min. Add froxen or tinned sweetcorn and heat through. You can then blitz half of the soup in a blender to make it smoother, andthen add back to the remaining soup mix.

You can eat the skin off of any potato providing it has been well scrubbed. Infact, this is the healthiest way to eat a potato as it adds roughage to your diet.

My friend always makes us baked sweet potatoes and she told me not to eat the skin...but both our husbands do so i'm wondering if i'm missing out on something!! I'm going to try it next time but as every one else has said, wash them really well!

Yes, clean well, put in in foil with a few pieces of butter and bake in the oven for about 20 minutes. Very sweet.
You can make it on the barbeque as well!

yes use it seperate in a soup to add thickness , i roast sweet potatoes in their skins and other veg , parsnips , carrot and herbs and serve with salmon , hollindaise sauce its quick ,easy and very , very nice. and yes have sweet potatoe like a jacket potatoe .
