I ground up all the grains and everything. Really delicious, but the 2 loaves just fell in the middle. What do you think?

At any point, did you scream, throw sh!t across the kitchen in a fit of either ecstacy or violence, and jump up and down and make the floor shake? I have experienced many a baking disASSter that way.

Any cake can fall regardless of it's ingredients if there was a loud noise. Did you slam the oven door or did something heavy hit the floor? Any of these two issues would have caused your cake to fall. If you were at the Pride Day Parade in Orlando instead of baking there would be no ruined cake. It's your own fault then.

Maybe you left the loaves too long to prove, ie. after you knocked them down you let them rise for too long. A long proving time can cause bread to sink.

Well, there must be something magical about trying to make a flourless bread that you just haven't gotten the hang of yet. Try again, or buy it at the store.
