Try using Macintosh or other baking apples. They work the best in recipes, I find. I've included some recipes for you, but they don't come with apple choices. Golden delicious often work, as well.

Recipe Ingredients

5 cup apples (cooked and mashed)
5 cup sugar
2 tbsp vinegar

Recipe Preparation
Boil applesauce on high heat, then add sugar and vinegar. I hold the
cinnamon until last 1/2 hour because I think it evaporates some. Cook
on high heat (about 4 hours) until the apple butter is as thick as
you want it when you cool and serve.

10 cup apples, blended
1/2 teaspoon cinnamon oil
5 cup sugar
1/4 teaspoon cloves, optional

Peel about 1/2 grocery bag of apples; core and cut into slices. Place apples in large pan and cover. Steam until tender and hot. Do not add water. Puree in a blender to make applesauce. Measure out 10 cups of apples and add other ingredients to crock pot. Cook 12 hours on ow, then 2 hours on high without the lid on. Stir occasionally and cook until thick.

Put the crock pot on Low .. or Warm .. put in a few Green Apples and 2 sticks of butter. The Green Apples will give it a little kick ..sprinkle a little sugar and cinnamon on the apples after they have stewed a while. Good Luck ! :)

pare and peel the apples, cut them up into small pieces and place in crock pot. Heat pot to medium heat and check every half hour until apples are mush shoft. Use a potato masher to crush to whatever consistence you want your apple sauce.
Season with some salt and some sugar, if needed.
Caution, Better keep the heat a little lower than too high. It will take longer to cook the apples, but they won't get brown.,
