I am in total awe of how they can decide what recipes to use when they have just found out what the showcase ingredient is. I'm sure that they have many recipes and ingredients available to cover all the bases, but still, with so many main showcase ingredients possible it's amazing to see them pull it together so well in one hour.

Any competent chef who understands how foods complement each other can do the same thing. . .and is expected to be able to, as a matter of fact. If you're not working for a restaurant that has a fixed menu, you need to be able to shop for the foods that are in season, inexpensive, and that work well together.

When I was in college, we used to do what we called "Poverty Pocket"* suppers toward the end of the month when money was REALLY tight. Everyone would bring one or two items, and the person in charge of the cooking had to figure out how to use them to make a meal.

It was challenging and fun. . .our own (waaaaaay before) Iron Chef menu planning!

* So named because the local TV reporters loved the term, "pockets of poverty." We figured that if some people lived in the lap of luxury, we were living in Poverty's pocket! ;-)

A good Chef will be able to look at the ingredients and know from experience what to do to them to make them taste great and what will go with what. It requires a vast knowlege of all different foods and their preparation methods. The timing is something that just has to be learned over time and with much practice. These dishes also have to be presented at the proper temperatures. Lots of practice. Oh yeah, and did I say practice.

it comes from lots of experience.. they have so much in their heads, that they don't even have to think about it. My husband is that way, give him anything, and he can make a meal in just a few Min's.

They can make contingency plans like: if its a fish we'll do this, if its a veggie we'll do this...etc.
