but you never hear from her, she apologizes alot when you email her for having back problems and not having had checked her account and then when you ask her out she asks "what do you have in mind"?

"What do you have in mind" means "I'm checking to make sure that you don't want to have sex or any other intimate contact". If you're looking to just hang out as friends, she might be interested, but if you're trying to have a romantic candlelit dinner and finish off with drinks at your place, she won't be able to participate. When she says that she wants to get to know more about you, she's saying that on the surface, she's not attracted to you. Maybe if she could get to know you better, she would either discover something exciting about you that would make her want to be with you, or not.

She might want you to take it slow. She might be puzzled about the attention that you pay her (for what reason, I don't know).
If she askes you "what do you have in mind" you could answer by saying: "some place nice where we can talk a bit and enjoy ourselves, got any suggestions?"
And then, if she accepts, take it real slow. And let her know more about you: hobbies, family, friends, latest vacations, movies, music, anything but former girlfriends (unless she asks about that herself)

I say she is probably only trying to be nice because of the crowd?
If she was truly interested in getting to know you better she would return your e-mails. I say ask her out again if you are interested in her when she asks what you have in mind tell her

she maybe to busy with other things in life, but really is interested in you and was hoping for something or she may have been interested in you at one point but has changed her mind and is trying to spare your feelings.

She is interested in you .. Maybe she has thigns going on in her life and cannot write back asap , give her some time
