I would recommend that you find a skillet screen that way when you cook them the splashed butter doesn't go everywhere and you have to clean up a huge mess! Another thing is you should peel and slice the potatoes like potatoe chips are cut that way they cook all the way throuhg and they aren't rare! When I fry potatoes I also cut onion in with it, it gives them a little more taste!

It is easier to fry the potatoes if you have cooked them first (boiled). If you do start with raw potatoes, wash them after they have been sliced to remove the starch. That starch makes them sticky and kinda gray coloured if you don't. Don't forget some onions or even bacon to fry them with. Ummm, ummm, good! Whoops...almost forgot, let raw potatoes chill in cold water before you add them to the hot oil. They will fry up much better. Remember that they will spatter so have a lid handy to stop from hurting yourself. I like to slide mine into the hot oil from a plate. Seems to keep down the spatter.

Boil them for a few minutes first and they will fry much faster. If you are using butter you don't want the temperature too high or it will burn. If you add a little olive oil to the butter you can make it a little hotter.

Add some olive oil to the butter to increase the temperature at which the butter burns.

Use olive oil and salt or garlic salt. Maybe some other herbal seasonings, which I like any Italian hebs. All of the above if you feel bold. You're making me hungry right now....
