BAKED POTATOES WITH SPICED BEEF CHILI
Microwaving the potatoes before baking helps cook them quickly, but the regular oven will produce a crispy skin. Have a mixed green salad garnished with Greek olives and roasted red peppers to start. End with vanilla custard and butter cookies.

2 8-ounce Yukon Gold potatoes
8 ounces lean ground beef
1 tablespoon chili powder
2 teaspoons dried oregano
1/2 teaspoon ground cinnamon
1 14 1/2-ounce can stewed tomatoes
2 teaspoons red wine vinegar




Preheat oven to 450°F. Pierce potatoes in several places with fork. Microwave potatoes on high 7 minutes, turning once. Transfer potatoes to oven and bake until tender, about 20 minutes.
Meanwhile, saut
 beef in heavy large skillet over medium-high heat 4 minutes, breaking up meat with back of fork. Mix in chili powder, oregano and cinnamon. Add tomatoes and bring sauce to simmer, breaking up large tomato pieces with fork. Reduce heat, cover and simmer 8 minutes to blend flavors. Uncover and simmer until sauce thickens slightly, stirring often, about 3 minutes. Add vinegar; season sauce with salt and pepper.

Split potatoes crosswise or lengthwise; fluff insides lightly with fork. Place on plates. Ladle beef over potatoes.

Makes 2 servings; can be doubled.

I have used a plastic bag in the microwave, but the best method that I have come up with is to wash the potato thoroughly and place in a Corningware dish with lid. Before putting into the microwave, sprinkle about 2 tsp. water onto the potato. Microwave on high for about 6-8 minutes (depends on microwave power and size of potato, but you can find the correct setting by experimenting). You should be able to push a fork through the potato when it is done. After the potato is done, I split the potato open, add butter, and replace the lid on the dish for about 3-5 min. (this allows time for the butter to melt). Place on a plate, add sour cream, green onion, bacon bits, cheese, and any other condiment desired, or just eat the potato with butter. Either way, it turns out really good. As an added note - you can cook more than one at a time in the Corning dish - just allow more time in the microwave. Happy eating!!

take your potato and wash in cold water scrub vigorusly with a scrub brush. most of the skin will be light brown color when done. pour 1 Tbs cooking oil and rub all over potato. put on baking sheet. add salt and pepper. bake 50-60 minutes350 * till done. enjoy
do not poke holes or wrap in foil.

Cut a few slices in the potato and insert some slices of onion. Drip olive oil on the whole thing, shake on some salt, pepper and garlic. Wrap it all up in foil and BBQ or bake it. Yummy.

I just put 2 in my oven! lol
Set oven at 350, wash large potatoe, smear with butter, roll in sea salt. Then wrap in foil, poke several holes in potatoe.
Bake at least 1 1/2 hrs.
(Yukon Gold or Butter Gold potatoes are the best)

bake it for a long time. each morning just put a potato in the oven whether you want to eat a baked potato or not. by the time it is finished, you may be hungry

Wash potato
Poke holes in skin liberally all around the potato
Cover with salt while still wet
bake in oven at 375 for about 2 hours.

Makes skin nice and crunchy and inside very soft and flaky.

Microwave leaves skin soggy.

All you have to do is get a potato and wrap it up in alunium foil put it in the oven for about an hour, and just check on it after that and see how long you have to keep it in for so just wait about an hour to check on it. hope it helps =).

wash potato very well
poke holes all over the potato
Coat with olive oil
sprinkle well with kosher or sea salt
bake at 400 degrees for 2 hours or until soft.

put potato in a plastic bag like a grocery sack and place in microwave. Cook about 6-8 minutes for one. It is soft all the way through.
