In our back yard, we have a walnut tree that has produced more walnuts than usual. I usually throw them away. This year I want to do something with them. They have a soft, green outer shell then the darker inner and hard shell. When the green part is removed it has an odor to it and is wet. How do you dry them and get them ready to eat?

Walnuts are a form of no pain, no gain food. You have to work for it, but the reward is great.Get an old window screen or something , hardware cloth works good. and put them on it. You want the air to circulate for better drying. After they are dry,Get some good gloves and remove the dried black stuff. DON'T get it on you,it has been used as dye for thousands of years, and takes about that long to wear off. Then you can put them someplace where you can make a mess and hose them with a garden hose to remove whatever is left. After they are dry again, it is safe to crack them. You need a good nutcracker for these, they are not English walnuts. These things fight for their lives. We used to use a hammer and a piece of railroad rail. I have even seen people use a vise. P.S. If you have access to a nice small farm tractor, just put the nuts in a burlap bag and drive over them until the black outer shell is removed,that is half of the work.

LOVE THIS ANSWER!! I have the same problem -- only my tree happens to be at the driveway. When they fall and hit the top of the car (or van) it sounds like we're getting bombed. One of my roommates suggested I cook them and use in pies but after reading the above answer I believe I'll just buy a bag from the store. Better yet, I'll get PECANS from Georgia!!
