All-American Chili:
6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.
Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.
Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.
Note: Like most chilis, this version tastes even better the next day.
Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

Really Really Easy Black Bean Chili
(vegetarian, but you won't miss the meat!)
1 onion, chopped
2 cloves garlic, crushed
2 T oil (I use canola)
2-3 T chili powder, depends how spicy you like it.
1 can black beans, drained and well rinsed
1 can crushed or diced tomatoes with half the juice (the big can)
1 can corn, or 1 cup frozen corn
Sautee the onion & garlic in the olive oil. When the onion is translucent, add the chili powder & stir.
Then add the beans & stir, then the corn & stir, then the tomatoes.
Turn the heat to low or medium low, leave the lid off (or halfway off to reduce splatter a bit!) and let it simmer for at least 40 minutes. I often leave it for a couple hours on low...just keep checking and put the lid on when the juice is reduced and it starts to get thick....if ever it does get too thick, add back in some of the juice from the can of tomatoes!
Serve hot, either plain, or over rice. Sometimes we sprinkle some sharp cheddar or jack cheese over top. If you skip the rice, a nice loaf of bread is good with this.

PREPARATION:
Heat oil in a large, heavy skillet. Cook ground beef and onions over medium heat until it is no longer pink. Stir in chili seasoning mix, then add remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for 10 minutes. Serve with cornbread or crackers.
Easy Chili recipe serves 6.

4 pounds coarsely ground sirloin
Olive oil or butter
2 (6-ounce each) cans tomato paste, thinned with water
3 to 4 medium onions, chopped, about 3 cups
1 green bell pepper, chopped, about 3/4 cup
2 to 10 cloves of garlic, minced (or to taste)
3 tablespoons commercial chili powder, or more to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon dried basil
In a 4-quart pot, cook meat in a little olive oil or butter (or a blend of the two) until no longer pink. Drain excess fat.
Add remaining ingredients and simmer 2 to 3 hours with the lid on.
Makes 6 to 8 servings.

Rotel brand tomatoes makes a product called Chili Fixens. I like homemade chili and have tried several recipes. This stuff is pretty good. Very easy to make.

Brown 1 1/2 lb ground beef, pork or turkey along with 1 onion chopped & 1 clove garlic minced. In medium pan, add meat, 1 can petite diced tomatos, 1 can kidney beans, 1 pkg chili seasoning, 1 stick butter & 1 can beer. Simmer for a couple of hours & serve. Yummy!!!

Chili: 1 lb hamburger 1 onion chopped 2-3 cloves garlic 1 can stewed tomatoes 1 can kidney beans To taste: chili powder cumin seasoned salt Brown the bruger and drain. Add the onion and garlic and cook until onions are translucent. Add to a pan and add the other ingredients. Taste and add more spices as you need to have your taste buds happy.

Crock pot
easy clean up bags
1 1/2 pound ground beef/Turkey if you would like it leaner
2 cans Pinto red beans
1 can of lentils
1 can of black beans
2 cans of tomato paste
1 can of whole tomatoes
2 packages of chili seasoning
put everything in the bag place in your crockpot and cook all day on low to medium heat. brown your meat first if you would like
place sour cream, and onions and stuff on the side for personal fixings, some grated cheese is nice too, i personaly like to serve it over frito corn chips

As a vegetarian, I can give a quick, good one:
Buy vegetarian ground meat...no need to cook it before you put it in with the rest of the ingrediants.
Use a spicy picante sauce, a few diced up jalapenos, a diced up onion, some Mexican flavored diced tomatoes, chili powder, cummin, salt, pepper, cayenne pepper, and you are good to go.
