Turn them into homemade chili served with cornbread. Second choice would be bean burritos ( heat beans over low, mash & mix with taco sauce ) Fill burritos & cover with shredded cheese & bake til bubbly....Serve with lettuce, tomato, sour cream & guacamole sauce!!

Mexican Beef and Bean Stew:
1 1/2 lbs beef stew meat, cut into 1 inch pieces
2 tablespoons flour
1 tablespoon vegetable oil
1 cup onions, coarsley chopped
1 (15 ounces) can pinto beans, drained
1 (16 ounces) can whole kernel corn, drained
1 (10.75 ounces) can beef consomme or beef broth
1 cup chunky salsa (I use Pace)
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon garlic powder or 2 cloves minced garlic
Dredge the beef in flour, and brown in oil in skillet. Put browned meat into crockpot and cover with remaining ingredients. Cook on low for 8-10 hrs or until beef is tender.

Bring 1 TSP of oil up to temperature (med-high) in a skillet. Add 1/2 cup chopped onion and 1/2 cup chopped bell pepper. Sautee the onions and pepper until the onion begins to turn clear. Add
a pound of lean hamburger meat to the skillet and brown the meat with the onions and pepper. Add salt and pepper. Add about a quart of the leftover beans (or more wouldn't hurt) and a can of cream of mushroom soup to the skillet. Reduce heat to low and stir mixture until the contents begin to "boil". Turn the heat off, place a lid on the skillet, and allow to sit for about 15 minutes. I call this dish "Hobo Stew".

PINTO BEAN, TOMATO AND BUTTERNUT SQUASH SOUP

1 tablespoon olive oil
2 cups chopped onions
1 cup chopped celery
4 garlic cloves, minced
4 cups canned vegetable broth
2 15-ounce cans pinto beans, drained
1 14 1/2-ounce can diced tomatoes in juice
2 cups 1/2-inch pieces peeled seeded butternut squash
1 teaspoon dried oregano
1/2 teaspoon dried crushed red pepper
6 tablespoons chopped fresh basil
Heat oil in heavy large pot over medium-high heat. Add onions and celery; sauté until onions are golden, about 7 minutes. Add garlic; stir 1 minute. Add broth and next 5 ingredients; bring to boil. Reduce heat; cover and simmer until squash is tender, about 15 minutes. Transfer 3 cups soup to blender; cool slightly, then puree until smooth. Return puree to pot with soup. Simmer until heated through, about 5 minutes. Season with salt and pepper.
Ladle soup into 6 bowls. Sprinkle each with 1 tablespoon basil and serve.

KING RANCH CHICKEN CASSEROLE
1 large onion, chopped
1 large green bell pepper, chopped
2 tablespoons vegetable oil
2 cups chopped cooked chicken
1 (10 3/4-oz) can cream of chicken soup, undiluted
1 (10 3/4-oz) can cream of mushroom soup, undiluted
1 (10-oz) can diced tomato and green chiles
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 (6-inch) corn tortillas
2 cups (8 oz) shredded Cheddar cheese, divided
Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.
Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.
Bake at 350° for 30 to 35 minutes.
Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.
Yield: Makes 6 to 8 servings

I have the perfect solution for you. Pick up som ground beef if you dont already have it and chili powder to make a tasty chili. It will be so good. You might as well cook some cornbread with it. You will thank me if you do this. (The chili powder is not a must but it adds the edge)

I would suggest some minute steaks or baked chicken breast. On the side have some macoroni and cheese and cornbread. Now you're talking about a meal that will have some substance!

mash them, then spread them on tortilla sprinkle with you choice of onions cheese hot peppers bacon whatever you have or like bake them 375 for a few minutes for mexican pizza's or turn them into a been dip top with sour cream enjoy
