I make "Santa Fe Soup"
Brown 1 pound ground beef, drain the grease and add 2 cans of whole kernal corn, 2 cans pinto beans, 2 cans of rotel, 1 packet of ranch dressing mix, and 1 packet of taco seasoning. You will probably have to add water to make it liquidy; just add till it is as thick as you want it. Simmer for about 30 minutes, and it is soooo good. I like to serve mine with tortilla chips.

Brown 1 lb ground beef with 1 onion chopped & 1 clove garlic minced. In stockpot, add meat, 1 head cabbage chopped, 1 can kidney beans, 1 can tomato juice & about 1 cup beef broth. Simmer for about 45 minutes & season to taste. Serve with crackers, corn chips or my favorite - Southern Cornbread!!

Green Chile Stew
Brown 1 lb. hamburger with chopped onions, garlic, salt and pepper. Drain meat and set aside. Add red wine to pan and stir to get remaining amount of meat from bottom of pan. In a jar, combine 2 T. flour/cornstarch and 2 T. water. Add to pan to make a rue. Add meat, cut potatoes, and 1 container of Bueno green chili. Let simmer together for 20 minutes. Delicious.
This is good with chopped onions added when served for a crunchy texture. Also, you can add tomatoes, too. Enjoy!

chop up and gently saute an onion and some celery.
add the ground beef and saute it til done.
pour in the following:
1 can of tomato soup
2 cans of vegetable broth, or 4 cups of water and some vegetable broth powder or cubes
1 cup frozen peas or 1 can of peas
1 cup of frozen mixed veggies or carrots or the like
1 can of sweet corn
some barley if you like or some elbow noodles or a 1/2 cup of rice
let it simmer (a crock pot works) for 2 hours or so

MEATBALL AND VEGETABLE SOUP
A warming and filling main-course soup.
1/2 pound ground pork
1/2 pound ground beef
1/3 cup chopped fresh parsley
1 tablespoon (or more) Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
2 large red-skinned potatoes, cut into 1/2-inch pieces
2 large carrots, peeled, cut into 1/2-inch pieces
2 medium leeks (white and pale green parts only), chopped
1 large rutabaga, peeled, cut into 1/2-inch pieces
3 14 1/2-ounce cans beef broth
1 28-ounce can diced tomatoes
Combine pork, beef, parsley, 1 tablespoon Worcestershire sauce, salt and pepper in large bowl; blend well. Form mixture into 1-inch balls. Heat oil in heavy large pot or Dutch oven over medium heat. Working in batches, add meatballs to pot and brown on all sides, about 4 minutes. Transfer to bowl after each batch.
Pour off all but 3 tablespoons drippings from pot. Add potatoes, carrots, leeks and rutabaga; sauté 5 minutes. Add broth and tomatoes with their juices. Return meatballs and any collected juices to pot. Bring to boil over high heat. Reduce heat to medium; simmer uncovered until meatballs and vegetables are tender, about 45 minutes. Season with more Worcestershire sauce, if desired and salt and pepper.
Serves 6.

Brown ground beef in skillet with salt, pepper, diced onions,&/or celery, peel & cube potatoes, carrots, cook with sufficient liquid til tender. (or- use canned or frozen veggies- your choice) can include green beans, corn, ect. I like to put a can of tomatoes in mine, and a few dashes of celery salt, if not using celery. You can make as small amount or large- just adjust the amounts accordingly. This is a good way to use left-over veggies.

ground beef cooked in pot then drain
add frozen mixed vegetables small 10 oz bag cook till soft and good mix in ketchup and beef gravy can a 15oz in to the mixture cook till heated add garlic seasoning if want and then add to little bowls and on top add mashed potatoes with cheddar or garlic flavored then sprinkle paparika and put in oven till crusted top coat and then if want add biscuits on side for 12-15 mins with the bowls in the oven at 350 degree heat and you should be good

INGREDIENTS:
1 lb. ground beef
1 onion, chopped
2 cups sour cream
1 lb. Velveeta
10 oz. can Rotel (tomatoes with green chiles)
15 oz. can chili no beans
15 oz. can stewed tomatoes
1-2 cans pinto beans
PREPARATION:
Cook hamburger and onion until hamburger is brown and onion is translucent. Combine sour cream, Velveeta, chili, tomatoes and beans together in a large pot. Stir in hamburger and onions. Heat through.
Serve with warm corn bread
