And...should it sit at room temperature to 'set'???

Yes, keep it covered. Covering it keeps the juices inside and prevents it from drying out. It can sit longer than 15 minutes too and room temperature is perfect. If you keep it in the heat, it will continue to cook and may dry out.

Are you asking about AFTER the turkey has cooked & you are letting it set so the meat tightens up to help seal in the juices????
If so, then it does not have to be covered & it can sit on the counter at room temp.
If you are talking about BEFORE cooking, I'm sorry but I have not idea what you mean....

A properly roasted turkey (roasted, uncovered, with a starting temp. of 450 to 500 degrees f. and dropped to 375) does not need to be covered while letting it set. The juices are well contained in the brown crispy skin - setting simply allows those juices to cool and be reabsorbed into the tissues. If it is sitting in a puddle of its own juices, no amount of setting (covered or uncovered) will cause those juices to be reabsorbed.

Yes, leave it at room temp after bringing it out of the oven. "Setting" it means that it continues cooking a bit and the juices stay in. You can tent it with foil if you want, that'll keep some moisture in.
