JAM BARS:

1 1/2 cups sifted flour
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
3/4 cup jam or preserves
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves

Sift together flour and baking powder in a small bowl and set aside.

In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly. Add sifted dry ingredients to butter mixture and stir to blend.

Spread a little less than half the dough into a greased baking pan (about 11 x 7 x 2 in.)

In a small bowl, mix jam or preserves with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula.

Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.

How much is in "a packet?" I have a great raspberry chicken recipe that calls for 12oz to 16oz of raspberry jam. Is "a packet" that big? Here's the recipe, just in case it is:

After cooking the chicken (boneless skinless breast works best for this, but use whatever you've got available) in a skillet, you add the jam and 16oz of good sour cream, 2 tsp rosemary, 1 tsp garlic powder, and 1 tsp onion powder. Add salt and pepper to taste. Stir everything until the sour cream and jam blend in well and melt smoothly all over everything. (These amounts are for enough chicken for dinner for 4-6 people. Use about half these amounts if it's chicken for one or two people.)

IF you're just looking for snacky stuff and have only one of those little foil food-service packets, spread white frosting or marshmallow cream on a graham cracker. Add the jam. One of those little packets should do 2-3 graham crackers. I said "white frosting," but this is really good with chocolate frosting, too.

Jelly Slice


Serving size: Serves 10 or more
Cooking time: More than 1 hour



INGREDIENTS


200g packet of Marie biscuits
125g unsalted butter, melted
2½ teaspoons gelatine
¼ cup (60ml) water
250g cream cheese
395g can sweetened condensed milk
1/3 cup (80ml) lemon juice
½ cup (125ml) cream
100g packet of jelly (the flavour of your choice)



METHOD


Blend or process biscuits until the mixture resembles fine breadcrumbs. Pour in butter and blend until combined.

Press biscuit mixture evenly over the base of a 20cm x 30cm lamington tin. Refrigerate until required.

Meanwhile, sprinkle gelatine over the water. Allow to stand for a couple of minutes to allow the gelatine to absorb the water. Microwave for 30 seconds or until dissolved.

Beat cream cheese until smooth in a medium bowl. Add condensed milk, lemon juice and cream. Continue to beat until smooth. Stir in the gelatine mixture and fold through the cream. Pour over the top of the biscuit crumbs. Refrigerate for 4 hours or until set.

Make jelly according to packet directions, but using only half the amount of water stated on the packet. Cool to room temperature before pouring over the cream cheese layer. Allow to set completely.

Cut into squares and serve.

Make some fry bread and top it with the jam.
Indian Fry Bread Fry Bread
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups warm water
Oil, for frying

Put flour, baking powder, and salt in a large bowl. Mix well, add warm water and stir until dough begins to ball up. On a lightly floured surface knead dough. Do not over-work the dough. After working dough, place in a bowl and refrigerate for 1/2 to 1 hour.
Heat oil to 350 degrees in a frying pan or kettle. Lightly flour surface and pat and roll out baseball size pieces of dough. Cut hole in middle with a knife (so the dough will fry flat) to 1/4-inch thickness and place in oil and cook until golden brown and flip over and cook opposite side until same golden brown. Dough is done in about 3 minutes depending on oil temperature and thickness of dough.

After fry bread is done top with favorite topping or, chile and cheese first, then cover with lettuce and tomatoes, onions, green chile and you have an Indian Taco.

Navajo Fry Bread
2 cups all-purpose flour
1 tablespoons baking powder
1 teaspoon salt
1 tablespoon plus 6 cups vegetable oil
3/4 cup warm water
1 cup powdered sugar, as optional topping
1 cup honey, as optional topping

In the bowl of a food processor, mix the dry ingredients. Stir in 1 tablespoon of the oil and the water, and process until smooth. Turn out onto a lightly floured surface and gently knead until the dough is just elastic and comes together, being careful not to over work. Shape the dough into a ball, cover tightly with plastic wrap, and refrigerate for at least 1 hour.
Divide the dough into 12 equal pieces. Flatten each piece and roll into a 7-inch circle, making as thin as possible. Poke a hole in the center with the handle of a wooden spoon or your finger.
In a large saute pan or deep fryer, heat the 6 cups of oil to 360 degrees F. Slip the rounds 1 at a time into the hot oil and cook for 2 minutes, turning once with a long-handled spoon. Drain on paper towels and repeat with the remaining dough.
Sprinkle the fried bread with powdered sugar and drizzle with honey, as desired, and serve.

how about a nice raspberry vinagrette?? 1/2c cider vinegar, some rosemary, bit of lemon, bit of thyme, and the jelly. Wisk really well, then stream in (wisking quick) 1c olive oil.
