I like panini sandwiches, but don't want to own such a specialized appliance as a panini press. What can I replace it with? A waffle iron probably won't work?

I also love panini sandwiches. What I do is I had purchased a pan on sale with the lines in it (looks like a grill). Then I use something heavy (I use a tea kettle with water so it has weight), put a paper towel over the sandwich then the kettle on top. Flip over and do the same. Works great!

I have a good suggestion, get two different size skillets, and a brick (wrapped in alum foil) or another heavy object, put the sandwich in the biggest pan then put the smaller pan on top weighted down by the brick or heavy object, and watch closely, maybe you could use canned veggies instead of a brick.

No, a waffle iron would make a mess. No need to buy a spendy gizzmo though. I make them w/ a heavy pan. Assemble your sandwich, with oil or butter on the outside. Grill/fry in a heavy pan or griddle pan--while one side is cooking, put a plate on top then just plop a heavy pan (cast iron works swell) on top. Flip and repeat the plate pan thing. Cheap, but good eats!

If you have a 'george foreman' grill that will work.

All a panini press is - is raised grates on an indoor grill, use a heavy object on top,
turn over - a panini.

That's it!

In the Alton Brown show in the Food channel he recommended to cover some brick in aluminium foil and press in the sandwich.

in case you have an previous George Foreman grill, that works great! If no longer, warmth a skillet as you may for grilled cheese. place a heavy pan or merchandise on your sandwich whilst it grills. do away with and change over, repeating via putting the load on sandwich whilst it chefs.
