Well I'm from Texas so we have all kinds of Mexican food.Most is called Texmex.If you go to Mexico you will have authentic Mexican food which taste nothing like what we have.They use ingredients we don't have here.If you want good

Get a good Mexican cookbook and follow the recipes until you get a feel for the methods and seasonings ,then try variating from there to create your dishes that appeal to your particular tastes.

Rick Bayless' cookbooks are fantastic. He has spent loads of time in Mexico studying the cuisine, and his cooksbooks are full of info and easy to follow.
