I like to marinate chicken at the very least overnight (either with a rub or a sauce), and when I cook it I cover the dish with tinfoil. It helps to keep the chicken juicy and flavorful.

Well if you are gonna bake it than cook it with liquids, such as salsa, or they have chicken liquid in the stores you can add for moisture and taste, if you have nothing, even water will work, but will not add any flavor. Frying goes the same way, keep the chicken moist anyway you can.

If you're speaking of fried chicken, the secret is to quickly sear the meat on both sides; lower the temperature to medium; cover, and turn about every five minutes until done. Also, if you don't have a good iron skillet, it would be good to invest in one. Good luck!

It depends on the brand of chicken also. I have found that Tysons Tender and Tasty chicken is so tender. I buy mine at Super Wal-Mart. Just dont overcook it.

Try pounding it with a meat pounder. Put the breasts between two pieces of plastic wrap and pound till they are of equal thickness throughout. then , do not over cook them!

I agree with the comment about pounding the chicken flat...also, maybe marinate it?
