I know there is no such thing as day zero but before the first listed day of creation what existed?

Your assuming time existed before day 1? On day1 time was created and matter and energy, there was no before. There is no present, past or future in heaven, there is no time. Heaven exists in all 3 past, present and future. Now get your head arund that one. Do you know that Gd is already in the future, and there was no pbeofre Gd because He just is and has never been a before God!

In the beginning was the Word. And the Word was with God, and the Word WAS God.

Other scriptures suggest that angels and demons were created before the material universe. Other than that, nothing else can be said about it.

God and His Son were in existance and decided to make mankind and thus the creation. It doesn't say what was there except that God and His Son.
