the eggs we eat are not fertilised, so they would not hatch just rot away or be eaten by animals

If we didn't take the eggs from the chickens to eat them, they would sit on them until the hatch for new baby chicks (in most cases).

Some would be fertilized so they could grow into the next generation of chickens.

Some would be sold to drug companies to be used for growing vaccines and for developing new medicines.

Some would be mixed into animal foods to add nourishment to their feed.
