Firstly, all houseplants should be considered toxic to cats until proven otherwise. Make SURE they are not chewing on the leaves.
Don't bother with the suggestions above....some require you to catch the cats 'in the act'....and others are potentially harmful.
To keep them out of the dirt is very simple: Place several large...or proportionate to the container size....pinecones on top of the dirt. (Just the natural ones...not any with glitter, glue, etc.) I get mine out of the yard and first 'zap' them in the microwave for 5-15 seconds in case there are any little crawlies in them that I don't want in my house. You can still easily water right through them. It's decorative, and trust me....it would be a RARE cat who would move them out of the way to get into the dirt. I've done this for many years.
It's not likely to happen, but if you have one of those cats who then 'retaliates' with inappropriate urination/BM right next to the pot, put the litter box in that exact spot for a few days. Then, start gradually moving it away a few inches or a foot at a time, until it's back where it's supposed to be.

He's decided he likes the house plant better. Make the plant less desirable by covering the dirt around the plant base with a sheet of aluminum foil so he resumes using his litter box. After about a week remove the foil. Then place some medium size decorative rocks on the soil so he doesn't think it's a good place to start using again.

Try using a spray bottle of water and spraying the cat every time they are near the plant. Then the cat will associate a bad thought with the plant and stay away.

Go to the hardware store and buy a few feet of chicken wire....cut it to fit inside the pot and bury it about an inch or two down. When the cat's paws get to it, they don't like how it feels on their pads and will go find something else to do.

Try a pet trainer. Run them away from the plants when they get near. Good luck and God bless you!
