Apple Crisp

4c.sliced apples
4tbsp.white sugar
cinnamon to taste
***************************
1/4c creamed butter
1/2c. rolled oats
1/4c. flour
1/2c brown sugar
1/4tsp salt
blend together in a bowl and sprinkle over the apples
**************************


put the apples and sugar cinnamon on the bottom of a glass loaf pan
then put the blended crisp over top of the apples

cook at 350f for 40 minutes


another recipe?
small can of sliced peaches with a little juice and cinnamon sugar
and the same crisp/crumble/cobbler recipe as above
sprinkle the crisp/crumble/cobbler mixture over the sliced peaches and bake for 40 minutes at 350f

Apple-Crisp Baked Apples:

We recommend using Pink Lady or Jazz (a popular new hybrid) apples, which tend to retain their color and shape better during baking. Prep and Cook Time: 1 hour, 15 minutes. Notes: You can substitute 1/3 cup golden raisins for the walnuts if you like.

1/3 cup walnuts, chopped medium fine
1/3 cup pecans, chopped medium fine
1/4 cup firmly packed dark brown sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/4 cup rolled oats
4 tablespoons cold butter, cut into small cubes
6 medium Pink Lady or Jazz apples, or other firm baking variety
1 1/2 cups apple cider

1. Preheat oven to 350º. In a small bowl combine walnuts, pecans, sugar, salt, cinnamon, cardamom, and oats. Add butter cubes and toss to combine.

2. Peel the top third of each apple and, using a melon baller, scoop out the stem and enough of the core so that the walls of the apple are about 1/2 in. thick. Take care, however, not to break through the bottom of the apple, or the filling will leak out when baking. Make the hole a bit wider at the top.

3. Using a small spoon or your fingers, generously stuff each apple; mound extra filling on top.

4. Put the filled apples in a 2-qt. baking dish. Pour cider into the pan around the apples, cover the dish with foil, and bake 45 minutes. Remove foil and bake, basting every 15 minutes, for an additional 30 to 45 minutes, until apples are easily pierced with a sharp knife (they may split open a bit at the bottom). Serve apples drizzled with the sauce from the pan and with a scoop of vanilla ice cream alongside.

Yield: Makes 6 servings

All those are also good reciepes, here's another suggestion:
4 McIntosh apples
3 tablespoons fresh lemon juice
1/4 cup firmly packed light brown sugar
1/2 stick (1/4 cup) unsalted butter, cut into bits
2 tablespoons light rum
4 (3-inch) cinnamon sticks
Mint leaves, for garnish if desired

Preheat the oven to 450 degrees F. Peel and core the apples, leaving them whole. Slice the apples horizontally into even 1/4-inch-thick slices, reassemble the slices to form whole apple shapes, and brush the apples with the lemon juice. Put the apples in a pie plate, fill the cavities with some of the brown sugar, butter, and rum, and sprinkle the apples with the remaining brown sugar, butter, and rum. Bake the apples in the middle of the oven, basting frequently, for 25 minutes. Reduce the temperature to 350 degrees, insert the cinnamon sticks in the cavities of the apples, and bake the apples, basting frequently, for 20 minutes more, or until they are tender and browned well and the juices are thick and syrupy. Divide the apples among 4 plates, spoon the syrup over them, and garnish the apples with the mint leaves.

Plain old baked apples are always good. Take the core out of the apples. Mix a little melted butter with cinnamon and sugar and stuff the cores with the mixture. You could add chopped nuts as well. Put the apples in a dish and bake at 350 degrees until they're soft. They can be served with ice cream.

Apple Harvest Cookies

1/2 cup margarine*
1 1/4 cups packed brown sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup apples, peeled, cored and chopped**
1 cup raisins
1 cup walnuts, chopped
1/4 cup milk

Preheat oven to 375 F. Grease cookie sheets (or spray with cooking spray).
In a large bowl, cream butter, brown sugar and egg. In a medium bowl, combine flour, baking soda, cinnamon, cloves, nutmeg and salt. Slowly beat flour into butter mixture. Stir in apples, raisins, nuts and milk. Drop dough by teaspoonfulls onto cookie sheets. Bake 10-12 minutes.

Yeild:about 4 dozen cookies

* margarine helps keep cookies soft. Blue Bonnett is best.
** I use Honeycrisp apples

Mix some pie crust and roll out. Chop the apples up. Sprinkle over crust along with sugar, cinnamon, and nuts or chocolate chips if desired. Roll up. Cut into 1"-1 1/2" pieces. Bake until lightly browned.

I've got the best recipe for apples you will ever eat and it is so easy to make. I've made this at the last minute when unexpected company arrives and it is always a huge success.

Apple Pandowdy

1 c. brown sugar, packed
¼ c. flour
¼ tsp. salt
1 tsp. vinegar
1 c. water
¼ tsp. cinnamon
Dash of nutmeg
5 c. slice, pared, cored cooking apples
3/4 c. chopped walnuts
¼ tsp. lemon juice
1 tsp. vanilla extract
2 Tb. butter or margarine

Pastry
1 c. sifted all-purpose flour
2 tsp. baking powder
½ tsp. salt
3 Tb. margarine
¾ c. milk

In saucepan, mix sugar, ¼ c. flour, ¼ tsp. salt; stir in vinegar, water; cook over low heat, stirring, until thick, set aside.

Start heating oven to 375 degrees F. Sift 1 c. flour, baking powder, ½ tsp. salt. With 2 knives, scissor-fashion, cut in margarine until size of peas; add milk; stir until moistened but still lumpy.

Arrange apples in well-greased 12”x 8”x 2” baking dish; sprinkle walnuts over top of apples. To sauce, add cinnamon, nutmeg, lemon juice, vanilla, butter; pour over apples.

Drop dough by spoonful on top of apples. Bake 40 minutes, or until topping is brown.

Serve warm with ice cream.

Makes 6 servings

How to Make Candied Apples

Remember the delicious crunch of candied apples? Now you can make your own for the whole family (except for the kids with braces on their teeth, of course).

Things You'll Need
3/4 cup water
10 apples
spoons
saucepans
2 cups granulated sugar
1 tsp. vanilla
greased baking sheets
1/2 cup light corn syrup
8 drops red food coloring
10 popsicle sticks
Steps
Buy good, firm apples, such as Granny Smith.
Wash apples, remove stems and dry them thoroughly with a towel.
Insert one stick into center of each apple. Push stick in at top, where stem would be. Set apples aside.
Mix sugar, corn syrup and water in a saucepan. Set saucepan on burner turned to low or medium low.
Stir sugar mixture constantly, until all sugar is dissolved.
Continue to let mixture cook - without stirring - for 30 to 45 minutes until a spoonful dropped in a glass of water hardens immediately, or until mixture reaches 275 degrees on a candy thermometer.
Stir in vanilla and food coloring quickly.
Dip apples immediately into hot sugar mixture, holding each apple by the stick and turning to coat. Let excess drip back into pan.
Set coated apples on a greased baking sheet with sticks pointing up, until candy hardens.
Tips & Warnings
If you don't want to make your own candied apples, they are available at grocery or specialty stores.
If you like, add a bit of cinnamon oil (not ground cinnamon) to the candy mixture to spice up the apples.

My sister and I used to make shrunken apple head dolls. That was always fun. If you mean edible stuff, spiced apple rings are great or try them with pork chops and sauerkraut. YUMMY!!
