How long does it take for pizza to go bad? Is there a chemical that prevents it?

I've heard before that delivery pizza contains some sort of chemical to prevent it from going bad for a couple days if left out. I've eaten day-old pizza on many occasions and never gotten sick. Does anyone know if there is anything to this?
