Check out Brethren Volunteer Service, at http://www.brethren.org/genbd/bvs/. I had a great experience working with their support in Honduras. You don't have to be a memeber of their church, but you should be able to commit to some of their values, and bring a strong willingness to work hard and learn new things every day. Good luck.
